Pecorino Riserva Morchiato

The “morchia” is the thick layer that remains on the bottom of terracotta jars used to store freshly pressed olive oil in the winter for use the following year. As handed down in peasant traditions, it is spread over cheese rounds to create a natural rind that allows the cheese to ripen over a long period, preserving its taste and aromas. The result is a pecorino with a strong fragrance and lightly piquant flavour that is excellent when paired with an aged structured red.
