Mortadella Bologna IGP - La Santo

Mortadella is symbolic of the city of Bologna; its aromatic flavour and heady fragrance are unique. It is a sausage that is different from other charcuterie in the way it is cooked: the lean parts are in fact mixed with cooked, cubed fat, then flavourings are added and the mix is stuffed into its skin. At this point, the mortadella is cooked in special heated rooms for a period that can vary according to size, and then it is cooled.
