Pasta Gragnano IGP - Casarecce

Artisan-made pasta, made by hand, using traditional techniques, dividing the processes to guarantee a superior quality. Only small-sized bronze draw plates are used to extrude the pasta. The pasta is dried naturally with a slow, static process, in boxes that reproduce the atmosphere of the old streets in the city of Gragnano and the rooms of the early pasta factories, at constant diffused temperatures. Drying time depends on the format and the different thickness of the pasta, the moisture in the air and the acidity content.
