The Spinosi brand has a century of history behind it and even today, it continues to make pasta with traditional methods: premium ingredients, selected and prepared slowly, using extrusion through bronze and cast iron rollers. The pasta produced is rough and porous, ready to be pulled and cut into the different shapes. The cut pasta is then “combed” by hand, using a knife, placed on sheets of white paper and then on wooden frames to dry at low temperatures for 24-36 hours, according to the format.
